Tucked away in the farmlands of northern Sumatra, local coffee growers use a fusion of new and ancient techniques to produce beans unlike any other.

How is our Indonesian coffee harvested?

The hot temperatures and high humidity levels in Sumatra create a unique coffee processing environment for local farmers. Producers have embraced Indonesia’s distinctive climate and, in fact, use it to their advantage through a rare process known as wet hulling.


What is wet hulling

Sumatran farmers race against the rain to wet-hull their coffee in the wet and humid Indonesian climate. Coffee cherries are harvested, pulped, and fermented overnight as normal, but the real Indonesian magic starts once they have been rinsed the following day. Instead of drying the beans, farmers hull them while still wet (at about 40 percent moisture). They remove the parchment when the coffee is soft and moist because exposed beans dry faster.

This uniquely Indonesian approach may have been a process born of necessity as a way to accelerate the drying process in Sumatra's hot, damp environment, but the results are extraordinary.

Indonesian coffee: a sustainable process

Coffee has the power to unite communities, and in some cases, it helps establish them. This has never been so evident, as on the island of Sumatra, where our Master Origin Indonesia wet-hulled arabica was born.

In July 2017, our AAA Sustainable Quality™ Program partnered with Fairtrade to create a new cooperative in Sumatra. It provides members with training and support in relation to sustainable farming practices, how to access affordable supplies and equipment. AAA agronomists are on hand to support farmers and help them to achieve consistent results using the wet-hulling method.

This support means that many farmers have been able to increase production and earn more for their coffee, and we, in turn, have a sustainable source of Master Origin Indonesia Arabica for coffee lovers the world over.

Members of the cooperative call themselves Ara (this is) Cahayani (sun or light) Gayo (the geographic name of the region, the Gayo Highlands). With some 1,800 members farmers, this cooperative is paving the way for Fairtrade coffee and sustainable practices for future generations to come.

It is designed to ensure the continued supply of high-quality coffee, improve the livelihoods of farmers and their communities, and protect the world we live in.

Indonesia Discovery


Step into the story of two of Indonesia’s beloved exports in this indulgent café mocha.


Ingredients:


Method:

  1. Pour the chocolate syrup into your large Recipe Glass.
  2. Froth your milk – about as much as milk as you’d use in a Latte Macchiato
  3. Pour it into your Recipe Glass.
  4. Extract your 40ml Master Origin Indonesia coffee.
  5. Top it off with some chili dark chocolate chips (coarsely chopped).

Tips:

  • Chill the chili dark chocolate bar in your fridge for a little while and it’ll break better when you go to chop it into chocolate chips.
  • Stirring the milk, coffee and syrup before tasting will bring out even more of this drink’s rich, woody aroma.

Dash of Milk

Try Master Origin Indonesia wet-hulled Arabica with a dash of milk - nutty, woody and roasted notes emerge in this intense Master Origin coffee with milk.


Ingredients

  • 1 x Master Origin Indonesia Capsule
  • 10ml of milk

Method

  1. First, extract the espresso coffee (40ml or 1.35 fl oz) with your Nespresso machine and pour it into the cup.
  2. Pour 10 ml of milk on top of the coffee.
