Dans le Sud-Ouest éthiopien se perpétue un savoir-faire ancestral exigeant. Durant un mois, les cerises de café sèchent en plein soleil et à l’air libre avec leur mucilage – substance végétale sucrée - et sont retournées à la main toutes les heures. Un travail de longue haleine qui permet de produire un Arabica « naturel » doux et fleuri.
