Rares sont les fermiers nicaraguayens qui savent encore aujourd’hui utiliser le « Honey Processing » qui consiste à faire sécher les grains de café encore enrobés de leur mucilage - substance végétale sucrée - après leur dépulpage. Un procédé exigeant et un suivi méticuleux qui permet d’obtenir un Arabica à la texture douce et soyeuse aux notes aromatiques de céréales sucrées.
