Brew 2 espressos in the same cup and let it cool. Crumble the chocolate cookies into small pieces and add to blender with ice cream and 2 tbs. of chocolate syrup. Add cooled espresso to blender and blend until smooth. If mixture is too loose, add another scoop of ice cream and blend again. Pour blended mixture into a tall glass. Top with whipped cream and a sprinkle of chocolate shavings.
