Directions

  1. Season the beef with garlic powder, chopped onions, cayenne powder, Worcestershire sauce and black pepper.
  2. Put into a vacuum seal bag. Add in a stalk of rosemary and slab of butter and some garlic and onion.
  3. Seal it up and use the Thermomix to sous vide the beef for 45 mins at 60 C.
  4. Prepare the Vegetables.
  5. Steam the Romensco, baby carrots, baby potatoes in oven till slightly soften.
  6. Remove from the oven.
  7. Heat up oil and butter on a pan. Saute some garlic and onions. Add in fresh thyme and let the aroma disperse out. Add in carrots and potatos and let it cook till glazed.
  8. It should be slightly charred on the outside and still with a crunch.
  9. Season with some salt, pepper and lime juice.
  10. Saute some garlic and oil in a pot. Add in a little cinnamon and chilli powder to extract the flavour. Add in Mexico Coffee.
  11. Season with salt and pepper, Add honey to mellow down the bitterness from the Mexico Coffee.
  12. Heat up the griddle on high. Rub some oil and honey on the steak after dabbing dry.
  13. Once the pan is hot, place steak on pan and sear for about 2 minutes. Turn it over, add butter, rosemary and garlic.
  14. Keep basting for another 2 minutes.
  15. Serve while hot.
