This recipe should make 3-4 lattes depending on the size of your mugs, but any excess pumpkin mixture can be stored in the refrigerator in an airtight container. Just be sure to reheat before adding your espresso.
Combine pumpkin, coconut milk and agave syrup in a saucepan over medium heat
Whisk to combine and heat for 5 minutes
Remove the saucepan from the heat, stir in vanilla, and set aside
Fill each glass 2/3 of the way full
Insert the Diavolitto capsule (or your preferred capsule) into your machine and brew your coffee (40ml) in each cup
Top with a sprinkle of cinnamon and enjoy!
