no caffeine because the caffeine has been separated.

How is decaffeinated coffee made?

Curious about how decaffeinated coffee is made?
One of the most common methods to produce decaffeinated coffee
is through a process called Swiss Water Process.
Developed by the Swiss Water Decaffeinated Coffee Company
in the early 1930s, the Swiss Water Process is known for
its ability to remove caffeine while minimizing
the loss of flavor.
First, unroasted green coffee beans are soaked in hot water.
This allows water-soluble compounds, including caffeine,
to dissolve. The resulting solution is then passed through
activated carbon filters, which selectively trap
large molecules such as caffeine.
Through this process, the water becomes saturated with
soluble compounds except for caffeine.
Once the green coffee bean solution is extracted,
the initial batch of beans are discarded and
fresh beans are introduced. The caffeine-free solution acts
as a medium for the caffeine in the newly introduced beans
to migrate over to the solution, essentially pulling away
caffeine from those beans.
The beans are then removed from the solution and dried,
resulting in caffeine-free green coffee beans.
Those beans are then roasted to produce decaffeinated coffee.

Is decaffeinated coffee really caffeine-free?

When we say decaffeinated, we might assume that it means
the coffee is completely caffeine-free.
However, it does not mean that the caffeine content is zero.
Coffee is classified as decaffeinated when the caffeine content
is reduced by 99% based on EU standards, and 97% based on
USDA (United States Department of Agriculture) standards.
According to the 2021 regulations issued by
the Korean Ministry of Food and Drug Safety,
coffee is classified as decaffeinated if at least 90% of its
caffeine content has been removed.

the long-term health of the heart.
Additionally, decaffeinated coffee still contains caffeine,
so if you must quit caffeine, it is better not to drink
decaffeinated coffee.
