Full-cream milk is the creamiest and foamiest because its fat content allows it to produce a thick and creamy finish. This makes it ideal for coffees with frothy milk foam such as cappuccinos, lattes, and mochas. Skim milk is better suited for thinner milk-based coffees such as flat whites. There’s also now a fantastic range of dairy-free alternatives – soy, almond, coconut, oat, rice. But unlike dairy options, they don’t have the same of level ‘stretch’ and therefore, to avoid curdling, shouldn’t be heated above 60°C.
