  • 60ml Drambuie
  • 100ml soda water
  • Virgin option:

  • 120ml Ginger Ale

Method

Step 1 of 6

Slice a pineapple thinly into two triangles.

Step 2 of 6

Pat dry with paper towel and lightly cover the pineapple pieces with sugar.

Place under the grill until the sugar caramelizes, set aside.

Alcoholic option:Add coffee, mezcal, Drambuie and pineapple juice to a carafe and stir down over ice for 10 seconds.
Virgin option:Add coffee, and pineapple juice to a carafe and stir down over ice for 10 seconds

Step 5 of 6

Alcoholic option:Pour into two tall glass with ice and top up with soda water.
Virgin option:Pour evenly into 2 tall glasses with ice and top up with Ginger Ale

Garnish with pineapple and mint leaves.
