Passion According to Paillard

Old Quebec, with its European charm, is an entirely natural setting for a bakery like Paillard. But, thanks to its four locations, the French bread and pastry knowhow you can find there goes well beyond its flagship store.
Paillard was love at first sight for Christelle Philippon, who has been its head baker and owner for the last year. “I have more than 20 years of experience in the profession. I came to Quebec City on vacation and fell in love with St-Jean street. Then I walked into Paillard and fell in love all over again.”
Her arrival marks the beginning of a partnership between Nespresso Professional and Paillard. “Even though the professional machines had impressed me in the past, I was first and foremost a customer. I had my own personal machine at home.” When she became Paillard’s owner, she wanted to share her positive experience: “it was clear to me, I absolutely had to make Nespresso part of my project. It’s a match made in heaven; at Paillard, both coffee and quality have an important part to play.”
For her, quality is a true passion: “we want the quality of our products to stand out, everything is made from scratch, from A to Z. We even make our own mayo. Paillard is steeped in artistry, and we only use local high-quality products. Even our flour is from Quebec. I’m French, but we can make great bread with Quebec flour! Quality stems from our ingredients, the proficiency of our employees, the level of service, constant efficiency and heartfelt client rapport. It’s a long chain and every link is as important as the next.”

“Even if the Nespresso machine saves me time, it’s not why I brought it in. I chose it for its quality and consistency. I regularly set up quality control check-ups for all of our locations in order to make sure that bread and pastries are up to par. I can trust Nespresso to make sure that our coffees achieve the same level of consistency. And it works. We’ve converted many customers that were filter coffee drinkers to our americano just because of its great taste. And a lot more customers to our latte. Our latte sales are through the roof. She notes that when customers enjoy great food, what they usually remember is the end of the meal. “For us, more often than not, that’s the coffee. If you don’t enjoy your coffee, it can ruin your entire dining experience.”
At Paillard, the pairing of choice is their fresh croissant served with a latte. Even the owner remains subject to its charm. “As far as I’m concerned, having a caramel latte with a croissant... well, now that’s a real treat.”
