India with monsooned robusta gets its intense, woody, spicy aromatics from the monsooned robusta blended into Indian arabica. Monsooning coffees is unique to India’s southwest coast. Months of monsoonal winds repeatedly swell and dry the beans. It mimics the journey they used to take when sailing to Europe.

Origins
India is a blend of arabica and monsooned robusta, both grown in the highlands of southern India. Traditionally, the monsoon process is only applied to arabica coffee, but the monsooned robusta gives India coffee even more body and adds woody notes. But the monsoon process requires attention after the coffee is harvested - up to three months of regular raking of the beans to ensure that only the best flavours develop in the coffee.


Roasting
The arabica is lightly roasted, to preserve its subtle aromas. In contrast, the robusta is well roasted to reveal its intensity and develop a full body. Very fine grinding supports the body and enhances the flavour.
Recipes
Try this coffee in a latte macchiato. You'll get woody, very spicy aromas and all the intensity of flavors typical of this blend of arabicas and robustas, which makes an excellent café au lait.
